Pumpkin lasagna (Jan 2008, from Chiara) Ingredients: * ˝ Pumpkin * 1 onion * 500 gr béchamel * 1 teaspoon olive oil * 9 lasagna noodles * 150 gr. shredded mozzarella cheese * 300 gr. parmesan cheese * 50 gr hazelnuts * 2 macaroons (amaretto biscuits) Directions: 1. Heat oil in a large saucepan over medium heat. Add first finely chopped onion, and -when it becomes golden- finely chopped pumpkin; saute until done. 2. Spoon some béchamel sauce into a casserole dish, cover with uncooked noodles, and top with the pumpkin mixture, some béchamel, some crumbled hazelnuts, some mozzarella and parmesan cheese. Every two layers add half a crumbled macaroon. Repeat several time until the lasagna noodles are over. Over the last layer add just a little béchamel and parmesan cheese. 3. Bake in a preheated 200 degree C oven for 20 minutes. Remove from oven, and let stand 15 minutes before serving.
